Smoked Salmon with Avocado Salsa and Prawns
This dish makes a perfect entrée or light snack that will keep the family full until the real feast begins later in the day!
INGREDIENTS
500g smoked salmon
15 cooked prawns
- Avocado Salsa
3 roma tomato medium seeded finely chopped - 2 avocado large finely chopped
- 1 red onion small finely chopped
- 1 tbs fresh chives finely chopped
- 1 tsp lemon rind grated
- 2 tbs lemon juice
METHOD
Line 8 holes of a muffin pan with plastic wrap, bringing the plastic 3cm above the edge of the pans
Combine all the ingredients for the salsa in a bowl and mix gently
Trim a slice of smoked salmon a little large than the base of the muffin pan
Place the salmon in bases of muffin pan and fold over the excess
Top each with a heaped tablespoon of the salsa then lay salmon trimmings over the salsa
Top with another heaped tablespoon of salsa and another slice of salmon
Fold over plastic to seal, refrigerate several hours or overnight
Combine all the dressing ingredients in a jar and shake well
Peel prawns, leaving tails intact
Place each on a plate, top with prawns and then drizzle with dressing
Super Easy Barramundi with Lemon
A quick and easy way of cooking barramundi, or any other white fish that will be sure to impress the whole clan!
INGREDIENTS
- 4 barramundi fillet
- 1 tbs olive oi
- 1 lemon thinly sliced large
- 1 tsp seasoning to taste
METHOD
Preheat over to 200 degrees
Lay out 4 sheets of aluminium foil and brush each lightly with oil
Place a fillet of fish on each foil sheet and sprinkle each with salt and pepper
Lay 3-4 slices of lemon over each fillet
Wrap securely, making sure that each parcel is completely sealed, then wrap each in a second layer of foil
Serve with chips, green salad and extra lemon
